Honey-Roast Gammon (Serves 4-6)
Ingredients
·      5- 4Ibs Gammon Joint (Soaked in cold water for 3-4 hours).
·      2 tbsps of runny honey
·      2 tbsps of wholegrain mustard
·      Juice and rind of 1 orange
·      1 onion
·      2tbsps of soft brown sugar
·      10 peppercorns
·      18 whole cloves
·      2 bay leaves
 
 
 
Method
1.  Drain the gammon and place in a large saucepan. Stud the onion with 3 of the cloves and add to the saucepan, followed by the peppercorns and bay leaves.
2.  Cover the joint with cold water and bring to the boil. Reduce the heat, cover and simmer for one hour.
3.  Preheat the oven to 200C/400F/Gas Mark 6. Drain the gammon and set aside for 5minutes.
4.  Remove the skin and majority of its fat, leaving a little. Mark the remaining fat into scored diamonds and stud with the remaining cloves. Place the joint in a roasting tin.
5.  Place the honey, mustard, brown sugar and the juice and the rind of the orange in a bowl; mix together well. Pour the glaze evenly over the gammon joint.
6.  Place in the oven and roast for 40-45 minutes, basting the joint well every 10-15minutes. Remove from the oven and leave to stand for 10-15minutes before slicing.
